Making Bacon And Eggs Over Sweet Potato And Baby Greens

At first when I started eating Paleo, I really missed bacon and eggs over toast. I kept thinking about what I could make that would satiate me in the same way.

Well… This is it! The first time I made this recipe I grilled the Sweet potato which also tastes amazing. Now I have no desire to eat toast in the morning. I actually crave greens and sweet potato! I love using the baby super greens with this recipe however you can use whatever your favorite is.

Ingredients:

1 Sweet Potato
2 Sliced nitrate free organic pork bacon
1 Egg
1 Small tomato
1 Small handful of baby super greens (baby kale , baby spinach, baby swiss chard)

Favorite Seasonings:

Sea Salt
Black Pepper
Oregano

Process:

  1. Preheat oven to 400F.
  2. Slice sweet potato and bake in the oven for approximately 15 minutes or till tender and slightly browned.
  3. Cook bacon and egg.
  4. Plate your dish with the Sweet Potato on the bottom,  baby greens, bacon then top it off with an egg. I like my egg poached or fried over easy.
  5. Serve with some cut tomato’s on the side.

The left over sweet potato will refrigerate and hold great for a couple days.
