Making the Bacon Wrapped Chicken Sausage With Apple Kale Salad
One thing I love the most about eating Paleo is that you get to eat as much bacon as you want! With the Paleo diet what satiates you is fat, good quality organic and nitrate free bacon fat… mmm! mmm! Fat is good for you and our bodies need fat to function properly, check out this great video about Fat called, “The Big Fat Fiasco”.
Ingredients:
3 Fresh Chicken or Turkey Sausage I use Chicken Apple sausage
6 Slices Bacon
Salad Ingredients:
Hand Full Baby Kale
Hand full Spring Mix
Curly Kale 2 leafs Chopped
½ Apple
Hand Full Fresh Italian Flat Leaf Parsley
¼ Bulb Fennel
Red Onion few slices
Kalamata Olives about 10 to 12
Dressing:
2 tsp olive oil
1 tsp apple cider vinegar
Wedge of Lemon
Sea Salt and Black Pepper
Dried oregano
Process:
- Pre-heat Oven to 450F
- Wrap 2 sliced of Bacon around each Sausage
- Place pan in oven and cook for 30-40 minutes depending on size of sausage
Salad Process:
- Chop Apple, Onion, Fennel
- Finely Chop Parsley and Curtly Kale
- Mix all ingredients in Salad Bowl
- Drizzle Olive Oil add Lemon, Salt pepper and Oregano
- Toss Salad and Serve!
