Making The Perfect Paleo Fried Chicken
My husband Jason is from Georgia and he knows what fried chicken is all about! He says this recipe is the best he has had… I agree :). Seriously, this is some darn good chicken! You will love it too! Serve this chicken with some Butternut Sweet Potato Mash and you will find that it will nurture your soul comforting you in the moment and leave you in a state of bliss for hours! I also like serving this with my Homemade Spiced Mayo and a mixed greens salad.
Ingredients:
2 Chicken Breasts
2 Eggs
2 Cups Almond flour
1 Cup Sesame Seeds
Coconut oil for Frying
Seasonings:
1 tsp Sea Salt
1 tsp Black Pepper
2 tsp Oregano
1 tsp Sage
2 tsp Olive Oil
1 tsp Apple Cider Vinegar
Process:
1. Put Almond Flour into a medium mixing bowl
2. Grind Sesame Seeds into a Flour like texture. Use a Coffee Grinder or Food Processor
3. Mix the Sesame Flour into the Almond Flour
4. Slice each Chicken Breast into approximately 6 pieces. You can make them whatever size you like the smaller the pieces the quicker it will fry.
5. Place the Chicken Slices into a bowl and season with all ingredients listed under seasonings
6. Crack 2 eggs into a bowl and beat together
7. Place some flour mixture on a plate
8. Dip a piece of chicken into the egg then into the flour and pat the flour mixture into the chicken until fully covered
9. Repeat step 8 until all the chicken has an even coating of egg and flour
10. In large Frying Pan put 2 Tbsp of Coconut oil and allow the oil to heat at Medium to High Heat. Note: A Non-Stick pan works great and make sure the heat is not too high.
11. Place about 3-4 pieces into the frying pan once it is hot. Note: Don’t over crowd the pan with chicken.
12. Be very gentle with the Chicken while it is frying. Fry the Chicken approximately 4-5 minutes per side or until golden brown.
13. In between each batch you will need to toss the oil and crumbs and start again with fresh oil.
14. Once removing the chicken from the Frying pan place it on a plate lined with a paper towel to soak any excess oil
15. Crack some fresh pepper and sea salt over top while its still hot
