Making the Banana Chocolate Pecan Muffins
Moist and delicious this mouthwatering muffin will satisfy your sweet craving with very little sugar. Only 3 Tbsp of maple syrup and the natural sugars from the bananas. Easy to make and the perfect treat for after a workout!
Wet Ingredients:
3 Eggs
3 Extra Ripe Bananas
1 Tbsp Vanilla
1/2 Cup Melted Butter
1/4 Cup Unsweetened Vanilla Almond Milk
3 Tbsp Pure Maple Syrup
1 tsp Apple Cider Vinegar
Dry Ingredients:
1 Cup Almond Flour
1/2 Cup Chestnut Flour
1/2 Milled Brown Flax Seed
2 tsp Cinnamon
1 tsp Baking Soda
1/2 tsp Sea Salt
1 Cup Chopped Pecans
1 Cup Dark Chocolate Chips 71%
Process:
1.Preheat Oven to 375F
2. Mix all the Dry ingredients except for the Pecans and Chocolate Chips
3. Mash up the Bananas and add Maple Syrup, Vanilla, Apple Cider Vinegar and the Almond Milk. Mix all together
4. Mix the Eggs and Melted Butter
5. Combine the Egg mixture with the Banana mixture
6. Add the dry ingredients and mix
7. Add the Chopped Pecan and Chocolate Chips
8. Grease muffin pan generously with coconut oil
9. Evenly divide the mixture into the muffin pan
10. Bake for 20 mins
