Making the Mango Mint Salsa
This is a bright and flavorful side to any grilled meat or fish. My favorite is to serve it with Grilled Chicken or a Grilled Lamb Burger. This will hold well in the fridge for a couple days and taste even more delicious after marinating. I like to use 2 ripe mango’s and 1 green mango to add a little more texture and crunch to the salsa.
Ingredients:
3 Medium Mango’s
1 Red Bell Pepper
2 Limes
1/2 Red Onion
1 Cup of Fresh Mint Leaves
1/4 Cup Extra Virgin Olive Oil
1 Tbsp Raw Apple Cider Vinegar
Seasonings:
2 tsp Green Mango Powder
2 tsp Ginger Powder
2 tsp Turmeric
2 tsp Dried Oregano
1 tsp Garlic Powder
1 tsp Cumin
Black Pepper
Sea Salt
Process:
1.Dice up all the vegetables and mango’s into similar size and place into a medium mixing bowl
2. Squeeze the juice from 2 limes and add to the mango mixture
3. Add the Olive Oil and Raw Apple Cider
4. Add all the Seasoning’s and taste for salt preference
5. Serve it up with your favorite grilled meat
