Recipe #52 | Sweet Potato Hummus

Making The Sweet Potato Hummus

This Hummus tastes so amazing you will be shocked for the first few bites! Serve this with some chopped vegetables such as Broccoli, Celery, Sweet Peppers or Kohlrabi. My favorite paring with this Hummas is any Grilled Meat or better yet Bacon!

Ingredients:

3 Medium Sized White Sweet Potato
3 Tbsp Tahini (Sesame Butter)
¼ Cup Extra Virgin Olive Oil
Juice from 1 Lemon
1 tsp Fenugreek
1 tsp Cumin
1 tsp Dried Oregano
Fresh Cracked Pepper
Sea Salt

Process:

1. Clean, Peel, Chop and Steam the Sweet Potatoes
2. Once Sweet Potatoes are tender remove from heat and transfer to a bowl
3. Allow Sweet Potatoes to cool for about 5 minutes
4. Transfer Sweet Potatoes to a Food Processor
5. Add all Ingredients and blend in the Food Processor till you have a smooth texture
6. Taste for salt and add more if needed
7. Serve with a drizzle of olive oil and Fresh chopped Mint and Italian Parsley on top
