Recipe #59 | Sweet Basil and Macadamia Nut Grilled Chicken

Making The Sweet Basil Grilled Chicken

This Chicken is fresh tasting and perfect served with a Tomato Cucumber Salad. Make lots of extra so you can eat the left over chicken for breakfast or lunch during the week.

 

Ingredients:

2 Extra Large Free Range Chicken Breasts

Ingredients for Marinade:

Handful Fresh Basil
Handful Fresh Thyme (Stem Removed)
10 Macadamia Nuts
1 Tbsp Sesame Seeds
2 Tbsp Stone Ground Mustard
2 Tbsp Apple Cider Vinegar
2 Tbsp Olive Oil
1 Tbsp Maple Syrup
1 tsp Sweet Paprika
1 tsp Dried Oregano
Sea Salt
Black Pepper

 

Process:

1. Place Chicken into a bowl
2. Use a Spice Grinder or Blender to grind up the Macadamia Nuts and Sesame Seeds together, it should almost look like a paste. you may need to chop or crush the Macadamia nuts first.
3. Put all the marinade ingredients into the blender and puree
4. Pour marinade over Chicken Breasts and cover completely
5. Cover the Chicken and allow to marinate for 30 minutes at room temperature. Note: If you want to marinate over night do not add any Salt then add the salt prior to cooking.
6. Preheat Grill to 350F
7. Once grill is ready cook Chicken
8. Remove from Grill and let rest for 5 minutes before serving
