Recipe #40 | Butternut Squash Mini Pizzas

Making The Butternut Squash Mini Pizzas

If you are eating dairy be sure to be purchasing a high quality dairy from organic sources and raw if possible. I love Parmigiano Reggiano Cheese which happens to be a raw cheese too. This tasty dish is perfect as an appetizer or a side dish, serve it with a fresh slice of Prosciutto di Parma… Mmm! Mmm! DeeeeeLish!

Ingredients:

Butternut Squash
Tomato Sauce
Mozzarella Shredded Cheese and Parmigiano Reggiano Cheese
Mushrooms
Sun-Dried Black olives pitted and diced
Fresh Basil
Olive Oil
Fresh Cracked Pepper
Dried Oregano

 

Process:

1. Arrange oven rack to the bottom shelve and Preheat oven to 400F
2. Slice and Peel top of Butternut Squash approximately 1/2 inch in thickness
3. Drizzle Olive Oil over the Butternut Squash
4. Spread tomato sauce over top each squash slice
5. Sprinkle cheese, chopped mushrooms, and diced olives
6. Sprinkle Chopped Basil ,ried Oregano ad Cracked pepper on top
7. Place in oven and bake for 20 minutes or until the Squash is tender
