Recipe #63 | Chocolate Hazelnut Mini Muffins

Making The Chocolate Hazelnut Mini Muffins

These Chocolate Hazelnut Mini Muffins are so delicious you will not believe your taste-buds! Justin’s Chocolate Hazelnut Butter is amazing as an icing in this recipe and it’s so good that it is also in the Muffin Recipe too. A delicious treat and made in a mini form so you can pop the whole thing in at once, or savory it slowly, either way you are sure to be pleased!

Ingredients:

1 Cup Almond Flour
1/2 Cup Chestnut Flour
1/4 Cup Coconut Flour
1 tsp Baking Soda
1/2 tsp Sea Salt
1/4 Cup Coconut Sugar
1/2 Cup Full Fat Coconut Milk
3 Large Eggs
1/2 Cup Coconut Ghee
1 Tbsp Vanilla Extract
1/4 Cup Justin’s Hazelnut Butter
4 Tbsp Dark Cocoa Powder

 

Process:

1. Preheat the Oven to 375F
2. Combine Almond Flour, Chestnut Flour, Coconut Flour, Baking Soda and Sea Salt
3. Melt Coconut Ghee on low heat. Once melted remove from heat.
4. Add Dark Cocoa Powder, Coconut Sugar, Vanilla and Justin’s Hazelnut Butter.
5. Beat Eggs with Coconut Milk
6. Add Chocolate Mixture to Eggs and Coconut Milk.
7. Add Flour Mixture to Chocolate Egg Mixture and Combine. The texture will be similar to soft Cookie Dough
8. Grease Mini Muffin Pan with Coconut Oil
9. Divide Muffin Mixture evenly into Muffin Pan
10. Bake at 375F for 15 minutes
11. Allow Muffins to Cool
12. Spread Justin’s Hazelnut Butter on each Muffin. Be gentle ad make sure the Hazelnut Butter is at room temperature.
13. Serve and Enjoy!
