Recipe #25 | Homemade Spiced Mayo

Making The Homemade Spiced Mayo

This mayo will be a great addition to so many recipes that you will wonder how you lived without it! Choose what ever spices and herbs you love to make this your own. Once made you can store in the fridge for up to a week (if it lasts that long). This recipe will make two small mason jars

Ingredients:

6 Egg Yolks
1/3 Cup Fresh Squeezed Lemon Juice (about 1.5 Lemons)
1.5 Cups Extra Virgin Olive Oil
2 tsp Apple Cider Vinegar
1 tsp Honey
2 tsp Stone Ground Mustard
1/4 tsp Smoked Paprika
1/2 tsp Garlic Powder
1 tsp Sea Salt
1 tsp Dried Oregano
1 tsp Fresh Cracked Pepper

Note: Use Dried Herbs if you want this to last longer. The moisture from the fresh herbs will cause the Mayo to go bad sooner.

Process:

1. Separate the Egg Yolks and keep the egg white for use in a different recipe.
2. Put Egg Yolks into the food processor. You can also use a Blender
3. Add all the ingredients BUT the Olive Oil
4. Blend the Ingredients and start to pour the Olive Oil into the mixture while it is blending
5. Continue to add the Olive Oil at slow pace just drizzle it into the mix until it is all gone
6. Continue to blend until you have a thick consistency this may take up to 10 minutes of mixing
7. Once it is complete transfer the mayo into 2 small Mason Jars and Serve
