Recipe #104 | Perfect Paleo Potato Salad

Making the Perfect Paleo Potato Salad

This is truly an amazing flavor combination! Bacon, hard boiled eggs and fresh dill all come together to create a beautiful synergy in this potato salad. I like to combine the ingredients when they are still a bit warm so the flavors come together quickly. Serve this alongside your favorite grilled meat or eat it on its own.

Ingredients:

2 lbs Baby Potatoes
1/2 lb Smoked Bacon
4 whole Hard Boiled Eggs
1/2 cup finely diced Sweet Yellow Onion
1/2 cup chopped Green Onion
1/2 cup chopped fresh Italian Parsley
1/2 cup chopped fresh Dill
1.5 cup chopped Celery
1/4 cup fresh Squeezed Lemon Juice
1/2 cup Raw Apple Cider Vinegar (be sure its Raw Apple Cider or the vinegar will be too over powering)
1/2 cup Extra Virgin Olive Oil
2 tsp Stone Ground Mustard
1 Tbsp Sea Salt
1 Tbsp Fresh Cracked Pepper
1 Tbsp Dried Oregano
2 tsp Smoked Paprika
2 tsp Cumin

Process:

1. Steam potatoes till tender and allow to cool down
2. Cook Bacon until crispy and allow to cool
3. Hard Boil 4 Eggs
4. Combine the Onion, Celery, Green Onion, Italian Parsley and the Dill in a large mixing bowl
5. Mix Lemon, Apple Cider, Olive Oil and Mustard in a measuring cup
6. Add mixture to the onion celery and herb mix
7. Add Oregano, Smoked Paprika, Sea Salt and Black Pepper
8. Chop Eggs and Bacon and add to mixture
9. Chop Potatoes and combine with all other ingredients
10. Serve
