Recipe #13 | Ginger Garlic Roasted Chicken

Making The Ginger Garlic Roasted Chicken

This recipe is easy and Deee-lish! The Ginger and Garlic is just enough to fill your home with a sweet aromatic smell that will have you and everyone drooling in anticipation! Get a free range whole chicken from your Local Farmers Market and it will certainly be tasty.

Ingredients:

1 Whole Chicken
1 Yellow Onion
3 Slices Fresh Ginger
3 Whole Garlic Cloves
4 Carrots
4 Stalks of Celery
½ Lemon
Duck Fat

 

Seasonings:

Sea Salt
Red Sea Salt
Black Pepper
Oregano
Sage
Smoked Paprika

 

Process:

1. Pre-heat oven to 500F
2. Chop all the Vegetables
3. Rub Duck Fat on bottom of roasting pan (I used a Cast Iron Pot)
4. Put all vegetable in the pan holding the Lemon and 1 Clove of Garlic and 1 Slice of Ginger
5. Rub Duck Fat all over Chicken and generously season the Chicken with Sea Salt inside and out
6. Stuff clove of Garlic and Slice of Ginger into the cavity of the Chicken
7. Place Chicken in pot on top of the chopped vegetables
8. Season the top of the Chicken with Black Pepper, Sage, Oregano, and Smoked Paprika
9. Cut Lemon into Wedges and squeeze lemon all over the Chicken and leave the lemon Wedge in the pot
10. Place Chicken into the oven and cook on high at 500F for 30 minutes
11. Turn oven down to 300F and continue to cook for 1 hour
12. Turn oven off and let Chicken rest in oven for an additional 15-30 minutes
13. Serve Chicken with your favorite sides. May I suggest Maple Sautéed Acorn Squash and a Simple Green Salad.

Note: While the Chicken is cooking check on it a couple times and spoon the vegetables and oil over top the chicken.
