Recipe #28 | Blueberry Chestnut Pancakes

Making The Blueberry Chestnut Pancakes

Holy Smokes you will not believe that these are 100% Paleo! Chestnut Flour makes these pancakes fluffy with a mild nutty and sweet flavor… They are so delicious your taste buds singing with joy! You will find Chestnut Flour at most Italian grocery stores, it has been used for years in Italian cooking especially from the Tuscany Region. This recipe will make 6-7 Pancakes.

Ingredients:

2 Eggs
1 Cup Chestnut Flour
1/2 Cup Almond Flour
1 tsp Baking Soda
1/2 tsp Sea Salt
2 Tbsp Coconut Butter Ghee
1 tsp Fresh Lemon Juice
1/2 Cup Almond Milk
1 Cup Frozen Blueberries

 

Process:

1. In mixing bowl combine Chestnut Flour, Almond Flour, Baking Soda and Sea Salt
2. In small sauce pan melt Coconut Butter Ghee
3. In small bowl beat eggs into melted Coconut Ghee add lemon juice, and Almond Milk
4. Pour liquid ingredients into the dry ingredients, combine until smooth
5. Add Frozen Blueberries
6. In Large Non-Stick Frying Pan melt some Coconut Ghee on medium to high heat
7. Scoop about 1/3 Cup of batter for each Pancake
8. Serve with Bacon fresh Berries and a light drizzle of grade 2 maple syrup
