Recipe #35 | Coconut Madeleines

Making The Coconut Madeleines

If you have already made the Marvelous Madeleine Recipe then this once will be a cinch! I tweaked that recipe to make a cookie that had a bit more Coconut Flavor come through. Make sure the Coconut Flakes you use are fine and use Extra Virgin Coconut Oil so the Coconut Flavor really shines in this delicious treat 🙂

Ingredients:

1 Cup Chestnut Flour
1/2 Cup Almond Flour
1/2 Cup Coconut Flakes
1 Tsp Baking Powder
1/4 Tsp Sea Salt
1/2 Cup Coconut Sugar
1/2 Cup Extra Virgin Coconut Oil
3 Large Eggs
1 Tbsp Vanilla Extract

Process:

1. Preheat Oven to 350F
2. Mix Chestnut Flour, Almond Flour, Coconut Flakes, Sea Salt and Baking Powder
3. In mixing bowl beat Eggs, Coconut Sugar and add Vanilla
4. In small Sauce Pan melt Coconut Oil and add to egg mixture
5. Combine the dry ingredients with the egg mixture
6. Place batter in the Fridge and allow to cool for at least and hour. **This step is important**
7. Mix the batter after it has cooled and you will notice the texture has changed
8. Evenly distribute the batter into a greased Madeleine Cookie Sheet use Coconut Oil to grease pan
9.Bake for 10-12 minutes
10. Allow the cookies to cool on a cooling rack and serve
