Recipe #9 | Coconut Seafood Sauté

Making The Coconut Seafood Sauté

This is an easy and fast meal you can make that will warm you on a cool evening. Use any combination for your favorite Seafood to give it your own twist.

 

Ingredients:

10 Jumbo Shrimp
5 Pieces Wild Pacific Sole
1 Zucchini
2 Cups Broccoli (about 1 large broccoli head)
1 Sweet Yellow Pepper
½ Cup Cherry Tomatoes
1 Yellow Onion
2 Garlic Cloves
½ Lemon
½ Can Coconut Milk
Fresh Basil
Fresh Italian Parsley

 

Seasonings:

Sea Salt
Black Pepper
Paprika
Oregano
Dill

 

Any Combination of your favorite seasonings will do
Aloha Seafood Seasoning is my favorite to use when cooking seafood. That is what I used in this recipe.

 

Process:

1. Steam Broccoli to desired tenderness and set aside
2. Chop all Vegetables
3. Clean fish and cube leave the Shrimp Whole
4. Sauté Onions and Garlic in Duck Fat or Coconut Oil until Onions are transparent (medium heat)
5. Add Peppers and Zucchini cook for 2 minutes (if your pan gets dry add a bit of the water you have from steaming the broccoli
6. Add Tomatoes and cook for a minute
7. Add Fish and Shrimp and cook for about a minute or until the shrimp start to turn color
8. Squeeze lemon into the pan
9. Add Coconut Milk
10. Add Fresh Chopped Basil and Parsley
11. Turn heat down and allow to simmer for about a minute and voila it is ready to eat!
