Recipe # 106 | Sauteed Rutabaga and Spinach

Sauteed Rutabaga and Spinach

Looking for a new vegetable to accompany your next meal? Try the delicious and nutritious rutabaga! The rutabaga is a root vegetable that is a cross between a turnip and cabbage. It has half the carbohydrates as potatoes. This is a delicious side dish to any prepared meat. If you have some left over roasted chicken shred up and add to the pan near the end of cooking to make yourself a full meal.

Ingredients:

1 Small to Medium Rutabaga
1/2 Onion
1 Garlic Clove
1/2 Diced Tomato
4 Cups Raw Baby Spinach
Butter
Olive Oil
1/2 Cup Water
1/4 Fresh Lemon
2 Sprigs Fresh Thyme
1 tsp Turmeric
1 tsp Smoked Paprika
Sea Salt
Black Pepper

Process:

1.Clean and dice rutabaga and onions. Finely chop garlic
2. Saute onions in butter and olive oil for a few minutes then as garlic
3. Add diced rutabaga and cook on medium heat for 5 minutes
4. Add fresh thyme, diced tomato and seasonings
5. Add 1/2 cup of water and place lid on pan and allow to simmer on medium to low heat for about 10 minutes or until rutabaga is tender
6. Add Spinach and place lid on pan to allow the spinach to steam about 3 minutes
7. Mix spinach into Sauteed vegetables and sever alongside your favorite protein
