Recipe #83 | Simple Cassava Crackers

Making the Simple Cassava Crackers

This recipe is super easy and only has 5 ingredients. You can serve with Guacamole or Liver Pate or if you eat Primal then it is perfect with Raw Cheese. Look for Cassava Flour at your local Caribbean, African, or Latin America food store.

 

Ingredients:

1.5 Cups Pure Cassava Flour
1 Free Range Egg
1/4 Cup Fresh Water
1 Tbsp Extra Virgin Olive Oil
1 tsp Sea Salt

 

Process:

1. Preheat oven to 450
2. Place 1 cup of flour in large mixing bowl
3. Hand beat egg, salt, water and olive oil in mixing cup
4. Using a fork combine the flour and egg mixture
5. Once the mixture forms a smooth paste add another 1/2 Cup of flour and knead the dough by hand until it forms a ball
6. Cut a piece of Parchment Paper to fit the size of your baking sheet
7. Place the Parchment paper on the counter or cutting board so your can form the dough directly onto the parchment paper
8. Using your fingers press the dough out to form a flat oval shape. You can use a roller however the dough may stick to the roller so i find my hands work best. add more flour as you are spreading out the dough.
9. Once your have spread out the dough into a thin layer use a fork to poke holes in the dough. I like doing this purely for texture and visual appeal.
10. Place the dough and parchment paper directly onto the baking sheet and bake for 10 minutes
11. Remove from the oven and flip the flat bread use a pizza cutter to cut into desired size.
12. Brush each cracker with olive oil sprinkle with Dried Oregano and Sea Salt
13. Cook for an additional 10 minutes or until golden brown
14. Allow crackers to cool then serve

    hi- i like this recipe b/c of it's simplicty, but I'm curious: i've made this 2x now and it just seems that there is not enough wet ingredients to achieve anywhere near the consistency in the 6th foto and definitely not in the 8th foto with all the flour added – the dough is very dry. I added moe water. Is a 1/2 C of liquid really all one needs?

      Hello Sorry for the great delay in commenting. My recommendation would be to add the flour gradually so that you control the consistency. I hope that helps some and that you found the crackers tasty 🙂
