Recipe #51 | Slow Cooked Lamb In Sundried Tomato Sauce

Making The Slow Cooked Lamb in Sundried Tomato Sauce

There is nothing like coming home after a hard workout and having a warm meal ready! Prepare this before you head to the gym and when you return home you will walk into the amazing aroma of sweet tomatoes and roasted lamb Mmm! Mmm! If you don’t have Lamb then use Beef Short Ribs.

Ingredients:

4 Pieces Lamb (Bone In)
1 Yellow Onion
4 Garlic Cloves
2 Tbsp Sundried Tomatoes in Olive Oil
16 oz Crushed Tomatoes

Seasonings:

Fresh Rosemary
2 tsp Dried Oregano
Sea Salt
Fresh Cracked Pepper
2 tsp Fenugreek
2 tsp Cumin
1 Tbsp Apple Cider Vinegar
1 Tbsp Maple Syrup
1 Tbsp Olive Oil
1 tsp Coconut Oil

Process:

1. Preheat Oven at 500F
2. Chop Onion and Slice Garlic
3. Rub some Coconut Oil into bottom of Pot
4. Place meat in pot and add all the Seasonings Garlic, Onions, and Sundried Tomatoes
5. Place Pot in Oven with NO lid at 500F for 30 minutes
6. Pour Crushed Tomatoes over meat
7. Place Lid on Pot and put back into the oven
8. Turn Heat down to 300F
9. Cook for 2 hours
10. Allow Meat to rest and serve with Broccoli or your favorite side
