Recipe #65 | Sweet Onion and Sesame Chicken

Making The Sweet Onion and Sesame Chicken

Sweet Vidalia Onions are perfect for this dish… The sweetness from the Onion and the delicate nutty flavor from the Sesame Seeds make the perfect combination with Chicken. Serve with a side of Coleslaw for a tasty meal! Some Variations to this would be to add some fresh garlic or use Chicken Wings and serve up at a football game 😉

 

Ingredients:

5 Chicken Legs and 4-5 Chicken Thighs
1 Diced Sweet Onion (Vidalia Onion or Yellow Onion)
1/4 Cup Apple Cider Vinegar (Raw Unpasteurized)
1/4 Cup Pure Maple Syrup
1 Tbsp Olive Oil or Coconut Oil
2 Tbsp Sesame Seeds
5-6 Strands English Thyme

 

Seasonings:

Sea Salt
Fresh Cracked Pepper
2 tsp Dried Rosemary
1 tsp Dried Sage
1 tsp Cumin
1 tsp Dried Garlic
1 tsp Fenugreek
1 tsp Sweet Paprika

 

Process:

1. Preheat Oven to 500F
2. Place all the Chicken into a Roasting Pan
3. Season the Chicken with all the Seasonings
4. Add all the rest of the ingredients Note: Place the Thyme underneath the Chicken so it does not burn in the high heat
5. Bake in the Oven at 500F for 25 minutes
6. Turn the heat down to 300F and add more Fresh Thyme
7. Cook for an additional 1 hour flipping the chicken every 15 minutes and basting with the oil and onions from the pan.
8. Serve with your favorite Coleslaw or Side Dish
